The bright acidity of fresh blue damson plums makes a beautiful compliment to earthy, peppery, floral cardamom. Made from velvety blue damson plums picked straight off my family's tree and left to macerate overnight with freshly ground cardamom pods and minimal organic cane sugar. Next day they are slowly cooked down in a low-heat oven until they are reduced to a thick puree–the ultimate concentration of flavors.
Brilliant in sweet applications–cake fillings, brownie swirl-ins, glazes, brioche toppers–and also a beautiful pairing with soft ripened cheeses such as camembert, brie, bucheron, or la tur.
