Bringing the joys of California winter citrus to your mouth! My parents have one squat but prolific mandarin orange tree on their property, and every Christmas I ask my mom if she can leave the final, sweetest selections on the tree for me to savor. Awarded this year with an especial bumper crop, I decided to give those precious little oranges a longer life by turning them into a marmalade.

The result is this not-too-sweet, bright, and wonderfully syrupy marm, rounded out beautifully with the herbal, faintly bitter note of campari. What a lovely treat for a thick slice of toast, or dolloped into a wintry citrus salad dressing, or sandwiched between layers of dark chocolate cake, or glazing a simple fish.
