Apricot Meyer Lemon Vanilla Marmalade
About 4 years ago my parents planted a new meyer lemon tree on their property after their old lemon tree died. The tree was tiny, producing only a handful of lemons for the first few years. In early December, my mom texted me photos of the little tree laden with beautiful, large meyer lemons. I knew I would be turning them into as many preserves as possible while home for the holidays!
As luck had it, a small stock of apricots frozen fresh from my parents' trees were tucked away in their chest freezer. I thought I could cut the typical overly sweet/bitter marmalade profile with a more complex and fruity combination of apricots. This turned into such a delightful marriage of early summer/early winter bounty–a good deal tart from the lemons, balanced by the sweet-floral apricots, finished with a heavy hit of organic vanilla beans and a hint of honey. A true ode the the mildest, juiciest king of all lemons.
