An early spring treat made with juicy ataulfo mangos and a treasure trove of apricots from my parents’ tree found in the freezer. This is sweetened with a mix of 50/50 honey/sugar, and only just enough to balance the bright acidity of the mangoes and apricots. A few whole vanilla beans add a lovely floral finishing note and compliment the honey with aplomb. A lovely and unexpected early spring provision!
