Vegan/Gluten Free Smoked Brownie Cookie with Pistachio Praline Paste

This cookie began with this directive: make an allergy/dietary restriction friendly cookie that does not cut any corners, that does not aim to be a 'healthy alternative', but a thing that simply exists in its own right. There will be fat, there will be sugar, there will be indulgence.
With this in mind, I'm proud to offer this supremely fudgey buckwheat brownie cookie that holds its moisture like a champion. With just a hint of hickory smoke powder, the star of the cookie gets a boost: cold smoked chocolate chips from Hot Cakes, a lovely company based in my old home state of Washington! Aiding the boost (and moisture retention) is my ever-favorite bulk chocolate supplier, Raaka, with their organic 66% unroasted chocolate feves melted and incorporated into the dough.
And of course, I couldn't stop there. Having been stuck on praline pastes for the month of January, I thought I would make this cookie just a touch more indulgent by stuffing it with a freshly made pistachio praline paste. The finely ground, crunchy bits of caramelized sugar and toasted nuts are a revelation, and perhaps also, I will admit, a nod to the annoyingly ubiquitous Dubai chocolate bar. I agree that it's everywhere for a reason–pistachios, chocolate and crunchy things are extremely appealing.
In the case of this cookie, it is not that dairy and eggs are being skipped around, leaving a sense of lacking. It is that they are simply not needed.
