There are a lot of sesame/tahini cookie recipes out there, so I decided to hone in on texture and technique to turn this one into something different. The base is a nutty tahini cookie made with freshly ground toasted tahini–easy enough–but what if we tripled the types of sesame? And instead of just adding a swirl of plain black sesame paste into the dough (boring!), the second dose of sesame came in the form of a crunchy, delightfully caramelized black sesame praline paste? And then, to top it all off, there were bits of a malted black&white sesame brittle (with dots of kasha thrown in, too) dispersed throughout the whole and then cheerily sunk into the top as a finishing flourish?

I love when a cookie really gets me thinking outside the box and utilizes less common baking and pastry techniques to unlock more layers of flavor–that's precisely what I'm here for!
