The greengage plum tree on my family's property offers firmer plums with a more honeyed sweetness than the blue damson tree. Their high level of pectin also produces a fruit butter with a satisfying thickness. I had already discovered that their nuanced sweetness pairs well with the toasty, grassy notes of genmaicha (a Japanese green tea with toasted puffed rice mixed in), so I followed that flavor trail to a good, cloudy sake. Indeed, those toasty notes of rice seem to do some subtle magic on the plums, rounding out their sweetness with a little hint of funk.
