This baybee has everything you ever wished for in a classic cherry dessert and then some, MINUS the fake cherry cough syrup flavor. Made with gorgeous plump dried montemorency (sour) cherries, plus organic freeze dried tart cherry powder in case you didn’t get the hint. Almond extract further rounds out and compliments the lovely cherry aroma. Since cherry and almond extract are such great friends (the pits of cherries share many of the same chemical compounds as bitter almonds, which is why almond extract and cherries are a natural combo), I moved to enhance almond notes by adding chunks of a freshly made, toasted marzipan. This marzipan weighs more on the nutty side of things, avoiding the pitfalls of your typical cloyingly sweet factory produced variety. Top this off with pleasantly crunchy, nutty pops of kasha (toasted buckwheat groats), and a light buckwheat flour, and you'll get something worth more than the sum of its parts.
