While I am known by many as a ‘flavor maximalist’, I also believe sometimes the simplest combination of high quality ingredients can produce the most phenomenal products. This much can certainly be said for this apricot vanilla butter: made only from organic apricots picked fresh from my family’s apricot tree, a minimal amount of organic cane sugar, a few bourbon vanilla beans, and vanilla extract added just before the canning process. The proof is in the process–apricots first macerated overnight with the sugar and vanilla beans to draw out their juices, then baked slowly for 6 hours until they reach a thick, spreadable consistency–and in the shining quality of the fruit itself. I have never tasted apricots like the ones that grow on my parents’ two small trees, and I am always overjoyed for the opportunity to can and share them with others each year.
